Christmas: How to Make Apple Arugula Salad for Dinner

For dinner Christmas Many prepare the typical turkey, others prefer suckling pig and, depending on family customs, garnishes such as Arabic rice, sweet potato puree or apples are also served on the table. To give you a share of vegetables on Christmas Eve, salads are also welcome.

For this reason, Sandra Plevisani, renowned pastry chef and author of the book “Sandra’s Christmas recipes” (Editorial Planeta), shares the recipe for the famous salad made with arugula and apples.


  • 300 gr of bacon cut into thick slices
  • 400 gr of baby arugula
  • 2 apples, peeled and thinly sliced
  • 1 cup of caramelized pecans
  • 200 gr of gorgonzola cheese

For the vinaigrette:

  • ¼ cup apple cider vinegar
  • 2 ½ tablespoons Dijon mustard
  • 2 tablespoons maple syrup
  • 1 cup of extra virgin olive oil
  • salt and pepper


  1. Preheat the oven 200º C (400º F)
  2. Bake the bacon, turning it to brown on all sides. Let cool, cut into pieces and reserve.
  3. In a salad bowl, mix the arugula, apples, caramelized pecans, gorgonzola cheese and bacon in pieces.

For the vinaigrette:

  1. Mix well the vinegar, mustard, maple syrup, salt and pepper.
  2. Add the extra virgin olive oil at the end.
  3. Drizzle the salad with the vinaigrette and serve immediately.
